Owner improving Fireside Grill

Although Lakeshore Hotel & Suites has new owners, Fireside Grill, the restaurant on the property, isn’t going anywhere.

In fact, the restaurant will be “spruced up” in the coming weeks, said Grogan. The business will remain open during the process.

“I think the improvements will aid in their success,” he said, commenting on the change of ownership.

In the last six months since he took over the restaurant operation, Grogan has focused on improving the quality of food and providing new menu options. His business partner is Nichole Olmstead.

His culinary training includes operating a Domino’s Pizza franchise in Flagstaff and a chain of liquor stores in the northern Arizona city.

“I knew my next step would be to operate my own place,” said Grogan. He devoted two years in searching for the right property.

Until he traveled to Fountain Hills to check out the business-for-sale listing, he had never visited the town.

“I fell in love immediately with the patio,” he said.

The restaurant serves three meals: Breakfast is available from 7 a.m. to 11 a.m., weekdays, and until 2 p.m., Saturday and Sunday. Lunch and dinner have the same menu from 11 a.m. to 9 p.m., Monday through Friday; until 10 p.m., Saturdays, and 7 p.m., Sundays. The hours will be adjusted as residents return.

Grogan introduced specials depending on the day of the week. They include: Monday, liver and onions; Tuesday, tacos; Wednesday, endless pastas; Thursday, $3 burgers, and Friday, fish fry.

He expanded the tap beer offerings to 12, including local breweries. Two new sangrias, recipes from his bartender, are sold.

The latest breakfast selections are stuffed French toast and avocado toast, choices recommended by the chef. The restaurant has about a dozen employees.
